Hello,
I have a Medion Akoya E4251 and it has a m.2 slot. I am thinking about installing a new m.2 drive and my question is if windows can boot from m.2 drive (faster), instead of onboard drive (slower).

Then I don't see why it would not be possible to boot from the M.2 SSD, you should be able to install Windows on it using the Media creation tool.

In that case, I think I would need a windows key to use that tool. And in my case windows is already installed in eMMC drive, but I don’t have the key to reinstall it

The windows key is usually in the system BIOS. So you should not ask it and windows will install perfectly.
When it's time to ask for the windows key, it will read it automatically from the BIOS and will not ask you.
This is usually done normally. And it should be like that in Medion Akoya E4251.

I have an NVME to prove it.
Out of curiosity, throughout the day, when I have a gap. I'm going to see if the Akoya E4251 can recognize it.
